- For the crispy chicken:
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 large eggs, beaten
- 2 tbsp olive oil
- For the salad:
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- For the dressing:
- 1/4 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp dried oregano
- Salt and pepper to taste
- Prepare the chicken: Preheat your oven to 400°F (200°C). In a shallow bowl, mix together the flour, Parmesan cheese, breadcrumbs, oregano, basil, garlic powder, paprika, salt, and pepper. Dip each chicken breast in the beaten eggs, then coat with the breadcrumb mixture.
- Cook the chicken: Heat olive oil in a skillet over medium heat. Cook the chicken breasts for 3-4 minutes on each side until golden and crispy. Transfer to a baking sheet and bake for 15-20 minutes, or until the chicken is cooked through. Let cool slightly before slicing.
- Make the salad: In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and red onion.
- Prepare the dressing: In a small bowl, whisk together the Parmesan cheese, olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper until smooth.
- Assemble and serve: Toss the salad with the dressing. Top with sliced crispy chicken. Serve immediately and enjoy!
