Here's what you'll need:
Ingredients:
- 1 lb pork belly, skin removed and diced into bite-sized pieces
- 3 medium potatoes, peeled and diced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional, for a bit of heat)
- 4 eggs
- Fresh parsley or cilantro for garnish
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is hot, add the diced pork belly. Cook until the pork belly is crispy and golden brown, about 8-10 minutes. Remove the crispy pork belly from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the diced potatoes and cook until they are golden brown and crispy, about 10-12 minutes. Stir occasionally to ensure even cooking.
- Once the potatoes are crispy, add the diced onion, bell peppers, and minced garlic to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
- Return the crispy pork belly to the skillet and stir to combine with the vegetables. Season the hash with salt, pepper, paprika, and cayenne pepper (if using). Adjust the seasoning according to your taste preferences.
- Using a spoon, create four wells in the hash for the eggs. Crack an egg into each well. Cover the skillet and cook until the eggs are set to your desired doneness, about 5-7 minutes for runny yolks.
- Once the eggs are cooked to your liking, remove the skillet from the heat. Garnish the crispy pork belly breakfast hash with fresh parsley or cilantro.
- Serve hot and enjoy the deliciousness!
