Crispy Quinoa Patties​

Ingredients:​

  • 1 cup cooked quinoa (cooled)
  • 1 cup grated carrot
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley (or cilantro)
  • 1/4 cup all-purpose flour (or gluten-free flour if needed)
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 1 large egg (beaten)
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (or any cooking oil of your choice)

Instructions:​

  1. Prepare the Ingredients:
    • Cook quinoa according to package instructions and let it cool.
    • Grate the carrot and chop the onion and parsley.
  2. Mix the Patties:
    • In a large bowl, combine the cooked quinoa, grated carrot, chopped onion, minced garlic, and parsley.
    • Add the flour, Parmesan cheese (if using), beaten egg, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  3. Form the Patties:
    • Shape the mixture into small patties (about 1/4 cup each), pressing them firmly to hold together.
