Hey folks! Just wanted to share this super simple recipe for crispy roasted potatoes that I make all the time. They’re the perfect side dish for pretty much any meal!

- 4 large russet potatoes, peeled and cut into cubes
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Season Potatoes: In a large bowl, toss the potato cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Roast: Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until they’re golden brown and crispy.
- Garnish and Serve: Sprinkle with fresh parsley if using, and serve hot.
