- 4 boneless, skinless chicken breasts
- 1/2 cup olive oil
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped (for garnish)
- In a bowl, whisk together the olive oil, orange juice, lime juice, minced garlic, ground cumin, dried oregano, salt, and black pepper to make the mojo marinade.
- Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting any excess drip off.
- Grill the chicken for 6-8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- Transfer the grilled chicken to a serving platter and let it rest for a few minutes.
