Curry is a flavorful and aromatic dish that originates from South Asia but has become popular worldwide. This easy curry recipe allows you to create a delicious and satisfying meal in no time. Customize it with your favorite vegetables, protein, and level of spice for a dish that suits your taste buds perfectly.




Ingredients:
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 can (14 oz) coconut milk
- 1 cup vegetable or chicken broth
- 2 cups diced vegetables (such as carrots, potatoes, bell peppers, and peas)
- 1 pound protein of your choice (such as chicken, tofu, shrimp, or chickpeas)
- Salt and pepper to taste
- Cooked rice or naan bread, for serving
- Fresh cilantro, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions:
- Prepare Ingredients:
- Chop the onion, mince the garlic, and grate the ginger.
- Dice your choice of vegetables and prepare your protein (if using meat or tofu).
- Cook Aromatics:
- Heat the vegetable oil in a large skillet or pot over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and grated ginger and cook for another 1-2 minutes until fragrant.
- Add Spices:
- Sprinkle the curry powder, ground turmeric, ground cumin, ground coriander, and paprika over the cooked aromatics.
- Stir well to coat the onion mixture with the spices. Cook for 1 minute to toast the spices, stirring constantly.
- Add Liquid and Vegetables:
- Pour in the coconut milk and vegetable or chicken broth.
- Add the diced vegetables to the pot and stir to combine.
- Bring the mixture to a simmer and let it cook for about 10-15 minutes until the vegetables are tender.
- Add Protein:
- If using meat, tofu, shrimp, or chickpeas, add them to the curry and simmer until cooked through, about 5-10 minutes depending on the protein.
- Season and Serve:
- Taste the curry and season with salt and pepper as needed.
- Serve the curry hot over cooked rice or with naan bread on the side.
- Garnish with fresh cilantro and serve with lime wedges for squeezing over the curry (if desired).
