- 1/2 cup unsalted butter, cold and cut into small pieces

- 3/4 cup granulated sugar
- 3 large eggs
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Ground nutmeg or cinnamon for garnish (optional)
- Prepare the Pie Crust:
- In a bowl, mix flour and sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
- Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Roll Out and Fit Crust:
- On a floured surface, roll out the chilled dough to fit a 9-inch pie pan.
- Transfer the dough to the pie pan, trim and crimp the edges. Chill the crust in the fridge for 10 minutes.
- Pre-Bake Crust (Optional but recommended):
- Line the pie crust with parchment paper and fill with pie weights or dried beans.
- Bake for 10 minutes, then remove the parchment and weights and bake for an additional 5 minutes until the crust is lightly golden. Let cool slightly.
- Prepare the Custard Filling:
- In a saucepan, heat the milk over medium heat until just starting to simmer. Remove from heat.
- In a bowl, whisk together sugar, eggs, flour, vanilla, and salt.
- Gradually whisk in the warm milk until smooth.
- Fill and Bake:
- Pour the custard filling into the pre-baked crust.
- Bake in the preheated oven for 45-50 minutes, or until the custard is set and the top is lightly golden.
- Cool and Serve:
- Let the pie cool completely before slicing. Garnish with a sprinkle of nutmeg or cinnamon if desired.
