I recently made Czech Vepřo Knedlo Zelo, and it was a comforting and hearty experience! This classic Czech dish features succulent roast pork, flavorful sauerkraut, and soft bread dumplings, making it a satisfying meal that’s perfect for family gatherings or a cozy night in. The combination of flavors and textures is simply delightful. Here’s how to prepare this traditional dish at home:
Ingredients:
- For the Roast Pork:
- 2 lbs (900g) pork shoulder or pork loin
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon caraway seeds
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika (sweet or smoked)
- 1 cup broth or water
- For the Sauerkraut:
- 2 cups sauerkraut (canned or jarred, drained)
- 1 onion, chopped
- 1-2 apples, peeled and diced (optional)
- 1-2 tablespoons vegetable oil
- 1/2 teaspoon caraway seeds
- Salt and pepper, to taste
- For the Bread Dumplings:
- 4 cups day-old bread, cubed
- 2 cups milk
- 1/2 cup flour
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- Chopped parsley (for garnish)
Instructions:
1. Prepare the Roast Pork:
- Preheat your oven to 350°F (175°C). In a large, oven-safe pot or Dutch oven, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent.
- Season the pork with salt, pepper, paprika, and caraway seeds, then brown it in the pot on all sides.
- Once browned, add the minced garlic and broth (or water) to the pot. Cover with a lid and roast in the oven for about 1.5 to 2 hours, or until the pork is tender and easily shreds with a fork.
2. Cook the Sauerkraut:
- While the pork is roasting, heat the vegetable oil in a saucepan over medium heat. Add the chopped onion and sauté until soft.
- Stir in the sauerkraut, diced apples (if using), caraway seeds, salt, and pepper. Cook for about 20-30 minutes, stirring occasionally, until the sauerkraut is tender and flavors meld together.
3. Make the Bread Dumplings:
- In a bowl, combine the cubed bread and milk, allowing it to soak for about 15 minutes.
- Add the flour, eggs, salt, and baking powder to the soaked bread and mix until combined.
- Bring a large pot of salted water to a boil. Form the dough into logs or patties and drop them gently into the boiling water. Cook for about 15-20 minutes until they rise to the surface. Remove with a slotted spoon and let them cool slightly.
4. Serve:
- Slice the roasted pork and serve it alongside the sauerkraut and bread dumplings. Garnish with chopped parsley for a pop of color.
