Ingredients:
- Pudding:
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1/2 cup brewed strong coffee (hot or cold)
- 4 oz semi-sweet chocolate, chopped
- 1 tsp vanilla extract
- For Garnish (Optional):
- Whipped cream
- Shaved chocolate or chocolate chips
- A sprinkle of cocoa powder
Instructions:
- Combine Dry Ingredients:
- In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and salt.
- Add Liquids:
- Gradually whisk in the milk and heavy cream until smooth. Place the saucepan over medium heat.
- Cook the Pudding:
- Cook the mixture, stirring constantly, until it begins to thicken and comes to a gentle boil. This should take about 5-7 minutes.
- Add Chocolate and Coffee:
- Remove the saucepan from heat. Stir in the chopped chocolate until melted and smooth.
- Add the brewed coffee and vanilla extract, mixing well until fully incorporated.
- Chill:
- Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
- Refrigerate for at least 2 hours, or until the pudding is set.
- Serve:
- Before serving, top with whipped cream, shaved chocolate, or a sprinkle of cocoa powder if desired.
