  1. Combine Dry Ingredients:
    • In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and salt.
  2. Add Liquids:
    • Gradually whisk in the milk and heavy cream until smooth. Place the saucepan over medium heat.
  3. Cook the Pudding:
    • Cook the mixture, stirring constantly, until it begins to thicken and comes to a gentle boil. This should take about 5-7 minutes.
  4. Add Chocolate and Coffee:
    • Remove the saucepan from heat. Stir in the chopped chocolate until melted and smooth.
    • Add the brewed coffee and vanilla extract, mixing well until fully incorporated.
  5. Chill:
    • Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
    • Refrigerate for at least 2 hours, or until the pudding is set.
  6. Serve:
    • Before serving, top with whipped cream, shaved chocolate, or a sprinkle of cocoa powder if desired.
