- 1 cup all-purpose flour
- 1 1/2 cups milk
- 2 large eggs
- 1 tablespoon melted butter
- 1/4 teaspoon salt
- 1 (15-ounce) container ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup chopped spinach, cooked and drained
- 1 egg
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish (optional)
- In a blender or mixing bowl, combine the flour, milk, eggs, melted butter, and salt. Blend or whisk until smooth. Let the batter rest for about 30 minutes.
- While the batter rests, prepare the filling. In a bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, chopped spinach, egg, garlic powder, salt, and pepper. Mix until well combined. Set aside.
- Heat a non-stick skillet over medium heat. Lightly grease the skillet with butter or cooking spray. Pour about 1/4 cup of the crepe batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip the crepe and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, stacking the cooked crepes on a plate as you go. You should get about 8-10 crepes.
- Preheat your oven to 375°F (190°C). Spread about 1/2 cup of marinara sauce evenly on the bottom of a baking dish.
- To assemble the manicotti, place a spoonful of the ricotta filling along one edge of a crepe. Roll the crepe tightly around the filling and place it seam-side down in the prepared baking dish. Repeat with the remaining crepes and filling.
- Pour the remaining marinara sauce over the rolled crepes, covering them evenly. Sprinkle the shredded mozzarella cheese over the top.
- Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove the manicotti from the oven and let it cool slightly before serving. Garnish with fresh basil leaves if desired.
