Ingredients:


  • 1/2 cup each chopped celery, onion, and green pepper
  • 1 garlic clove, minced
  • 3 tablespoons of butter
  • 1 can (14-1/2 ounces) of chicken broth
  • 1 cup of diced peeled potatoes
  • 1 cup of shredded carrots
  • 1-1/2 teaspoons of salt
  • 1/2 teaspoon of pepper
  • 3/4 teaspoon of dill weed
  • 1 can (14-3/4 ounces) of cream-style corn
  • 2 cups of half-and-half cream
  • 2 cups of fully cooked salmon chunks or 1 can of salmon, drained, bones and skin removed (14-3/4 ounces)
  • Optional: Crumbled cooked bacon, minced chives, and cracked black pepper
Directions:

  1. In a large saucepan, melt the butter and sauté the celery, onion, green pepper, and garlic until the vegetables are tender.
  2. Add the chicken broth, potatoes, carrots, salt, pepper, and dill. Bring to a boil.
  3. Reduce the heat, cover, and simmer for 40 minutes or until the vegetables are nearly tender.
  4. Stir in the corn, half-and-half cream, and salmon. Simmer for an additional 15 minutes or until heated through.
  5. If desired, garnish with crumbled cooked bacon, minced chives, and cracked black pepper.
  6. Serve and enjoy this comforting and flavorful chowder!
