Ingredients:
- 1/2 cup each chopped celery, onion, and green pepper
- 1 garlic clove, minced
- 3 tablespoons of butter
- 1 can (14-1/2 ounces) of chicken broth
- 1 cup of diced peeled potatoes
- 1 cup of shredded carrots
- 1-1/2 teaspoons of salt
- 1/2 teaspoon of pepper
- 3/4 teaspoon of dill weed
- 1 can (14-3/4 ounces) of cream-style corn
- 2 cups of half-and-half cream
- 2 cups of fully cooked salmon chunks or 1 can of salmon, drained, bones and skin removed (14-3/4 ounces)
- Optional: Crumbled cooked bacon, minced chives, and cracked black pepper
- In a large saucepan, melt the butter and sauté the celery, onion, green pepper, and garlic until the vegetables are tender.
- Add the chicken broth, potatoes, carrots, salt, pepper, and dill. Bring to a boil.
- Reduce the heat, cover, and simmer for 40 minutes or until the vegetables are nearly tender.
- Stir in the corn, half-and-half cream, and salmon. Simmer for an additional 15 minutes or until heated through.
- If desired, garnish with crumbled cooked bacon, minced chives, and cracked black pepper.
- Serve and enjoy this comforting and flavorful chowder!
