Made this cucumber salad for a friend and they loved it! You all need to try it too. Fresh and crunchy!

INGREDIENTS
- 1 lb mini cucumbers sliced into 1 cm thick pieces
- 2 teaspoon salt to draw out excess moisture from cucumbers
Dressing:
- 2 cloves garlic minced
- 1.5 tablespoon regular soy sauce
- 2 tablespoon rice vinegar
- 2 teaspoon sesame oil toasted kind
- 2.5 teaspoon white granulated sugar
- ½ tablespoon mirin
- ½ tablespoon Chinese chili oil (Chinese-style chili oil is recommended, but you can use any type you prefer)
INSTRUCTIONS
- Trim the ends off the cucumbers and slice them into 1-cm thick rounds, then place them in a large bowl.
- Sprinkle salt over the cucumber slices and massage it in.
- Let the cucumbers sit for 20 minutes to remove excess water and enhance their crunchiness.
- While waiting, mix the dressing ingredients in a small bowl.
- Rinse the cucumbers under cold running water to remove the excess salt, then strain and pat them dry with paper towels or a clean kitchen towel.
- Return the cucumbers to a large clean bowl, pour the dressing over them, mix well, and enjoy!
