INGREDIENTS​

  • 1 lb mini cucumbers sliced into 1 cm thick pieces
  • 2 teaspoon salt to draw out excess moisture from cucumbers

Dressing:​

  • 2 cloves garlic minced
  • 1.5 tablespoon regular soy sauce
  • 2 tablespoon rice vinegar
  • 2 teaspoon sesame oil toasted kind
  • 2.5 teaspoon white granulated sugar
  • ½ tablespoon mirin
  • ½ tablespoon Chinese chili oil (Chinese-style chili oil is recommended, but you can use any type you prefer)

INSTRUCTIONS​

  • Trim the ends off the cucumbers and slice them into 1-cm thick rounds, then place them in a large bowl.
  • Sprinkle salt over the cucumber slices and massage it in.
  • Let the cucumbers sit for 20 minutes to remove excess water and enhance their crunchiness.
  • While waiting, mix the dressing ingredients in a small bowl.
  • Rinse the cucumbers under cold running water to remove the excess salt, then strain and pat them dry with paper towels or a clean kitchen towel.
  • Return the cucumbers to a large clean bowl, pour the dressing over them, mix well, and enjoy!
