I'm excited to share a dish with you that was influenced by one of my favorite characters from the wildly popular anime series, Doraemon! If you're a fan like myself, you are aware of how much Doraemon loves dorayaki, those delicious Japanese pancakes that are loaded with sweet red bean paste. I thus made my own recipe, and I have to say that the outcome was quite delightful! Without further ado, let's explore the world of Doraemon and prepare some delectable dorayaki!

- 1 1/4 cups of all-purpose flour
- 1 teaspoon of baking soda
- 2 eggs
- 1/2 cup of sugar
- 1 tablespoon of honey
- 3/4 cup of milk
- Anko sweet red bean paste
- Combine the all-purpose flour and baking soda in a bowl.
- In a separate bowl, whisk together the eggs, sugar, and honey until well blended. Add the milk and mix until thoroughly combined.
- Gradually add the dry ingredients to the egg mixture, stirring until a smooth batter forms.
- Heat a non-stick frying pan with a small amount of oil and ensure excess oil is wiped off. Over medium-low heat, pour 1/8 cup of batter onto the pan to form pancakes. Cook for about 2 minutes until bubbles appear on the surface of the pancakes and the edges begin to dry out. Flip the pancakes and cook for an additional minute.
- Transfer the cooked pancakes to a plate and cover them with a damp paper towel to keep them moist.
- Take one pancake and spoon a generous tablespoon of Anko sweet red bean paste onto it. Place another pancake on top, creating a sandwich. Wrap the pancake sandwich in plastic wrap and gently press down with your hands, ensuring the edges are sealed.
