Dulce de Leche Cheesecake Recipe:

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
For the filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup dulce de leche
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
For the topping:

  • 1/2 cup dulce de leche
  • 1/4 cup heavy cream
Instructions:

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture into the bottom of the prepared pan to form an even crust. Bake for 10 minutes, then set aside to cool.
  3. In a large bowl, beat the cream cheese until smooth. Add 1 cup dulce de leche and 1 cup sugar, and beat until well combined. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until smooth.
  4. Pour the filling over the cooled crust. Bake for 50-60 minutes, or until the center is set and the edges are lightly browned. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  5. Remove the cheesecake from the oven and run a knife around the edge of the pan to loosen it. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  6. For the topping, combine 1/2 cup dulce de leche and heavy cream in a small saucepan over low heat. Stir until smooth and warmed through. Let it cool slightly before pouring over the chilled cheesecake.
  7. Slice and serve the Dulce de Leche Cheesecake. Enjoy!
