Ingredients:
- 24 maraschino cherries, drained and patted dry
- 8 oz semisweet or dark chocolate chips
- 2 tsp coconut oil or shortening
Instructions:
- Line a baking sheet with parchment paper or a silicone mat. Drain those cherries well and pat them dry with a paper towel.
- Next, melt the chocolate chips and coconut oil together in a double boiler or microwave, stirring frequently until completely smooth and melted.
- Using a fork or toothpick, dip each cherry into the melted chocolate, tapping off any excess chocolate.
- Transfer the chocolate covered cherries to the prepared baking sheet as you go. If the chocolate starts to firm up too much, just reheat for 30 seconds.
- Once all the cherries are dipped, pop the tray into the fridge to fully set the chocolate coating, about 1 hour.
