Easy Cheese Sauce with Thyme and Bacon
Ingredients:
- 300 grams fresh or 100 grams dried pasta of your choice
- 170g streaky bacon
- 3 tablespoons butter, divided (1 tbsp for cooking bacon, 2 tbsp for sauce)
- 2 tablespoons flour
- 1 cup milk
- 150g grated cheese (e.g., 100g cheddar, 50g parmesan)
- 1/4 - 1/2 teaspoon black pepper
- 1 heaped tablespoon fresh thyme leaves, roughly chopped, plus extra for garnish
- Prepare Bacon and Sauce:
- Fry bacon in 1 tbsp melted butter over medium-high heat until crispy. Set aside on paper towels to cool, then roughly chop into a mix of crumbs and larger pieces.
- Make the Cheese Sauce:
- In a medium saucepan over medium-high heat, melt the remaining 2 tbsp butter. Add flour and whisk for about a minute to cook off the raw flour taste.
- Reduce heat to medium-low. Gradually add milk, whisking vigorously to incorporate and ensuring no lumps form. Add more milk if needed for desired consistency.
- Continue cooking, whisking until the sauce begins to simmer. Reduce heat to low and gradually add grated cheese in three batches, whisking well after each addition until melted and smooth.
- Finish the Dish:
- Stir in black pepper and most of the chopped bacon (reserve some for garnish).
- Add cooked pasta and chopped fresh thyme to the cheese sauce. Let it simmer gently for a minute, adding a splash of pasta water if the sauce needs loosening.
- Serve:
- Dish out the pasta with cheese sauce, garnishing with remaining bacon bits and a sprinkle of fresh thyme.
