- 6 large eggs
- 1/4 cup milk (any type you prefer)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 small onion, diced
- 1 bell pepper, diced (any color you like)
- 1 cup chopped spinach or kale
- 1/2 cup cherry tomatoes, halved
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite cheese blend)
- Fresh herbs for garnish (optional)
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch oven-safe skillet or baking dish with cooking spray or butter.
- In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.
- Heat the olive oil in a skillet over medium heat. Add the diced onion and bell pepper, and sauté for 3-4 minutes until softened.
- Add the chopped spinach or kale to the skillet and cook for an additional 2 minutes, until wilted.
- Pour the egg mixture evenly over the vegetables in the skillet. Arrange the halved cherry tomatoes on top.
- Sprinkle the shredded cheese over the entire surface of the frittata, covering the vegetables evenly.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the cheese is golden and bubbly.
- Once cooked, remove the frittata from the oven and let it cool slightly. Garnish with fresh herbs if desired.
- Slice the frittata into wedges and serve warm. Enjoy your cheesy brunch delight with a side of toast or a fresh salad.
