I made this easy veggie flatbread the other day, and it’s perfect for a quick lunch or snack! Loaded with fresh veggies and super tasty.

Easy Veggie Flatbread Recipe
Ingredients:- 2 store-bought flatbreads or naan
- 1/2 cup hummus (or your favorite spread)
- 1 cup mixed vegetables (bell peppers, cucumbers, spinach, etc.)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled (optional)
- Olive oil for drizzling
- Salt and pepper to taste
- Fresh herbs (parsley or basil) for garnish (optional)
- Preheat your oven to 400°F (200°C).
- Place the flatbreads on a baking sheet and spread hummus evenly over each.
- Top with mixed vegetables, cherry tomatoes, and feta cheese.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 8-10 minutes until the edges are crispy and the veggies are slightly tender.
- Garnish with fresh herbs if desired, slice, and enjoy!
