1. Classic Deviled Eggs:
- 6 hard-boiled eggs, peeled and halved
- 2 tablespoons mayonnaise
- 1 teaspoon yellow mustard
- Salt and pepper to taste
- Paprika for garnish (optional)
- Remove the yolks from the halved eggs in a delicate manner into a bowl.
- Mix together with mayonnaise, mustard, salt and pepper until creamy.
- Fill the egg whites with a spoon or pipe the yolk mixture out of them.
- For that old-fashioned look sprinkle paprika on top of it all.
- Put them in the refrigerator before serving.
2. Guacamole Deviled Eggs:
- 6 hard-boiled eggs, peeled and halved
- 1 ripe avocado
- 1 tablespoon lime juice
- 1 tablespoon chopped cilantro
- Salt and pepper to taste
- Optional toppings: diced tomato, chopped green onion
- Empty the yolks from each of the egg halves into a bowl.
- Mash the egg yolk together with avocado, lime juice, cilantro, salt and pepper until smooth.
- The egg whites should be refilled with spoonfuls or squeezed out of a pastry bag using avocado paste.
- To garnish you may use diced tomato and chopped green onion if pleased.
- Keep cool in the fridge till the time of serving.
3. Bacon Jalapeno Deviled Eggs:
- 6 hard-boiled eggs, peeled and halved
- 2 slices cooked bacon, crumbled
- 1 jalapeno, seeded and finely chopped
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Chopped chives for garnish (optional)
Instructions:
- Separate the yolks from each of the 12 halves into a bowl.
- Combine together eggs yolks with bacon bits, jalapeño, mayo, Dijon mustard in one mashed mixture by adding salt & pepper accordingly.
- The yolk mix is returned back to fill empty shells using either spoon or pastry piping bag as well as cover them at last stage.
- Additionally there may be flavored by sprinkle of powdered chives on top when served on table for example during dinner time or lunch hour.
- For cooling purposes refrigerated overnights are advisable before summer time comes again.
