Ingredients:​

For the Sandwich:
  • 4 large eggs
  • 4 slices of bread (your choice: whole wheat, sourdough, or a thick-cut artisan bread)
  • 2 tablespoons butter or oil (for cooking the eggs and toasting the bread)
  • 2 slices of cheese (cheddar, Swiss, or your favorite type)
  • 4 slices of bacon or sausage patties (cooked)
  • 1 avocado, sliced
  • 1/2 cup sautéed mushrooms (optional)
  • 1/2 cup spinach or arugula
  • 1 small tomato, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Hot sauce (optional, to taste)
For Garnish:
  • Fresh herbs (e.g., parsley or chives), chopped
  • Pickles or jalapeños (optional)

Instructions:​

1. Cook the Bacon or Sausage:
  • Cook the bacon or sausage patties according to package directions or your preference. Set aside.
2. Sauté the Mushrooms (if using):
  • In a skillet over medium heat, add a bit of butter or oil. Add the sliced mushrooms and cook until browned and tender, about 5-7 minutes. Set aside.
3. Cook the Eggs:
  • Heat a bit of butter or oil in a skillet over medium heat. Crack the eggs into the skillet, being careful not to break the yolks if you want them sunny-side up. Season with salt and pepper. Cook until the whites are set but the yolks are still runny, or to your desired doneness. You can also scramble the eggs if you prefer.
  • Remove the eggs from the skillet and set aside.
4. Toast the Bread:
  • Butter one side of each slice of bread. Toast the bread in the skillet or in a toaster until golden and crispy.
5. Prepare the Spread:
  • In a small bowl, mix together the mayonnaise and Dijon mustard. Adjust the seasoning with salt and pepper if needed.
6. Assemble the Sandwich:
  • Spread the mayonnaise-mustard mixture on one side of each slice of toasted bread.
  • On the bottom slice, layer the following: a slice of cheese, the cooked bacon or sausage, sautéed mushrooms, avocado slices, spinach or arugula, tomato slices, and the cooked eggs.
  • Add a second slice of cheese on top if you want extra gooeyness.
  • Top with the second slice of bread.
7. Optional: Grill the Sandwich:
  • For an extra indulgent touch, you can grill the sandwich in the skillet. Add a little butter to the skillet and cook the sandwich over medium heat until the bread is golden and the cheese is melted, pressing down slightly to help everything meld together.
8. Garnish and Serve:
  • Garnish with fresh herbs, pickles, or jalapeños if desired. Cut the sandwich in half and serve warm.
