Get ready to impress your taste buds with the decadent flavors and fancy texture of homemade Oysters Rockefeller! Whip up this masterpiece of savory seafood and aromatic herbs, and show off your culinary skills to all your loved ones
- 12 fresh oysters, scrubbed clean
- 1/2 cup unsalted butter
- 1 small shallot, finely chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach leaves, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- 1/4 cup Pernod (an anise-flavored liqueur), optional
- 1/4 cup breadcrumbs (preferably Panko)
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Crushed ice or rock salt (for serving)
Instructions:
- Preheat your oven to 450°F (230°C).
- Arrange the scrubbed oysters on a baking sheet lined with a layer of crushed ice or rock salt to keep them steady.
- In a skillet, melt the unsalted butter over medium heat.
- Add the finely chopped shallot and minced garlic to the skillet. Sauté until softened and fragrant, about 2-3 minutes.
- Stir in the chopped spinach leaves and cook until wilted, about 2-3 minutes.
- Add the chopped parsley and chives to the skillet, stirring to combine.
- If using, pour in the Pernod and allow the mixture to simmer for another 1-2 minutes to cook off the alcohol.
- Season the mixture with salt and freshly ground black pepper to taste.
- Spoon a generous portion of the Rockefeller mixture over each oyster, covering it completely.
- In a small bowl, combine the breadcrumbs and grated Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the top of each oyster.
- Place the baking sheet with the prepared oysters in the preheated oven.
- Bake for 8-10 minutes, or until the breadcrumbs are golden brown and the oysters are cooked through.
