- 4 chicken drumsticks or thighs
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons berbere spice blend
- 1 tablespoon tomato paste
- 2 cups chicken broth
- 2 tablespoons oil
- Salt, to taste
- Hard-boiled eggs (optional, for serving)
- Injera or rice, for serving
Instructions:
- Heat the oil in a large pot over medium heat. Add the chopped onions and cook until softened, about 5 minutes.
- Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the berbere spice blend and tomato paste to the pot, stirring to coat the onions.
- Place the chicken pieces in the pot and toss to coat them with the spice mixture.
- Pour in the chicken broth and bring the mixture to a simmer. Cover the pot and let it cook for about 45 minutes to 1 hour, until the chicken is tender and cooked through.
- If desired, add hard-boiled eggs to the pot during the last 15 minutes of cooking to allow them to soak up the flavors.
- Season the Doro Wat with salt to taste.
