Ingredients:
  • 4 chicken drumsticks or thighs
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons berbere spice blend
  • 1 tablespoon tomato paste
  • 2 cups chicken broth
  • 2 tablespoons oil
  • Salt, to taste
  • Hard-boiled eggs (optional, for serving)
  • Injera or rice, for serving

Instructions:
  1. Heat the oil in a large pot over medium heat. Add the chopped onions and cook until softened, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
  3. Add the berbere spice blend and tomato paste to the pot, stirring to coat the onions.
  4. Place the chicken pieces in the pot and toss to coat them with the spice mixture.
  5. Pour in the chicken broth and bring the mixture to a simmer. Cover the pot and let it cook for about 45 minutes to 1 hour, until the chicken is tender and cooked through.
  6. If desired, add hard-boiled eggs to the pot during the last 15 minutes of cooking to allow them to soak up the flavors.
  7. Season the Doro Wat with salt to taste.
  8. Serve the Doro Wat hot with injera or rice, and enjoy!
