Looking for a healthy and flavorful soup? Fakes Me Spanaki, a Greek lentil and spinach soup, is simple, nutritious, and perfect for a cozy meal! Packed with plant-based protein and greens, it's as comforting as it is good for you.
*Ingredients:*
- 1 cup dried lentils, rinsed
- 1 onion, finely chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 6 cups vegetable broth
- 1 bay leaf
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 4 cups fresh spinach, roughly chopped
- Juice of 1 lemon
*Instructions:*
1. In a large pot, heat olive oil and sauté onion, carrots, and garlic until softened.
2. Add the lentils, bay leaf, oregano, salt, and pepper, and stir to combine.
3. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 30–35 minutes until the lentils are tender.
4. Add the spinach and cook for another 5 minutes until wilted.
5. Remove from heat, stir in lemon juice, and adjust seasoning as needed.
*Tip:* Serve with a sprinkle of fresh herbs and crusty bread on the side for a filling meal!
