Packed with protein-rich lentils, fresh veggies, and fragrant herbs, this dish is as nourishing as it is delicious. Whether you enjoy it as a main meal or a side, it's sure to become a fall favorite.
**Recipe:**
*Ingredients:*
- 1 cup lentils (rinsed and drained)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 2 carrots (sliced)
- 1 bay leaf
- 1 tsp dried oregano
- 2 tbsp tomato paste
- Salt and pepper to taste
- Olive oil and vinegar for serving

1. In a large pot, sauté onion, garlic, and carrots in olive oil until softened.
2. Add the lentils, bay leaf, oregano, and tomato paste; stir well.
