Falafel Burgers

These homemade falafel burgers are packed with herbs, spices, and all the deliciousness you crave in a burger.

Ingredients:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (or chickpea flour for gluten-free)
- 2 tablespoons olive oil
- Burger buns
- Toppings of your choice (lettuce, tomato, onion, tahini sauce, etc.)

Instructions:
1. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper (if using), salt, and pepper. Pulse until the mixture is coarsely ground and holds together when squeezed.
2. Transfer the mixture to a bowl and stir in the flour until well combined. If the mixture seems too wet, add more flour as needed.
3. Divide the mixture into equal portions and shape them into patties.
4. Heat the olive oil in a skillet over medium heat. Cook the falafel patties for 4-5 minutes on each side, or until golden brown and crispy.
5. Toast the burger buns if desired, then assemble the falafel burgers with your favorite toppings.
6. Serve immediately and enjoy your delicious homemade falafel burgers!
