**Ingredients:**
- 2 cups dried gigantes (giant beans), soaked overnight
- 1 large onion, finely chopped
- 2-3 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 1/4 cup olive oil
- 1 tbsp tomato paste
- 1/2 tsp sugar
- 1/2 tsp dried oregano
- 1/2 tsp ground cinnamon (optional)
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste

**Instructions:**
1. Rinse and drain the soaked beans, then boil them in a large pot of water until tender (about 1-1.5 hours), and drain.
2. Preheat your oven to 375°F (190°C).
3. In a large skillet, heat olive oil and sauté onion and garlic until softened.
4. Stir in the crushed tomatoes, tomato paste, sugar, oregano, cinnamon, salt, and pepper. Simmer for 10 minutes.
5. Combine the beans and tomato sauce in a baking dish, mixing well.
6. Cover with foil and bake for 40-50 minutes, stirring occasionally, until the sauce is thick and flavorful.
7. Garnish with parsley and serve with crusty bread or as a side dish.

This wholesome dish will transport you straight to the Mediterranean!
