Ingredients:

  • 2 pounds chicken thighs and drumsticks
  • 1/2 cup soy sauce

  • 1 teaspoon black peppercorns

  • 3-4 potatoes, peeled and quartered (optional)
  • Cooked white rice, for serving

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine soy sauce, vinegar, water, minced garlic, bay leaves, black peppercorns, and sugar (if using).
    • Add the chicken pieces to the marinade, making sure they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. Cook the Chicken:
    • In a large pot or Dutch oven, heat vegetable oil over medium heat.
    • Add the sliced onion and sauté until softened and translucent.

    • If you prefer a thicker sauce, remove the chicken and potatoes from the pot and set them aside. Increase the heat to medium-high and simmer the sauce until it reduces to your desired consistency.
