I recently made Finnish Lihapiirakka, and it was a delightful experience! These Finnish meat pies are filled with a savory mixture of ground beef and rice, all encased in a soft, doughy crust. They are perfect as a hearty snack or a comforting meal. Here’s how you can make them at home:
Ingredients:
For the Dough:
- 1 cup warm milk
- 1/4 cup warm water
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 cup melted butter
- 3 1/2 cups all-purpose flour
For the Filling:
- 1 lb (450g) ground beef
- 1 large onion, finely chopped
- 1 cup cooked rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon allspice (optional)
- 2 tablespoons butter
For Frying:
- Vegetable oil for frying
Instructions:
1. Prepare the Dough:
- In a large bowl, combine the warm milk, warm water, and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
- Add the salt and melted butter to the yeast mixture and stir to combine.
- Gradually add the flour, one cup at a time, mixing until a soft dough forms.
- Turn the dough out onto a floured surface and knead for about 5-7 minutes, until it is smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
2. Prepare the Filling:
- In a large skillet, melt the butter over medium heat.
- Add the finely chopped onion and sauté until it is soft and translucent.
- Add the ground beef and cook until it is browned and cooked through, breaking it up with a spoon as it cooks.
- Stir in the cooked rice, salt, pepper, and allspice (if using). Cook for an additional 2-3 minutes, then remove from heat and let the filling cool slightly.
3. Assemble the Lihapiirakka:
- Punch down the risen dough and divide it into 10-12 equal pieces.
- Roll each piece into a ball, then flatten it into a circle about 5 inches in diameter.
- Place a generous spoonful of the filling in the center of each dough circle.
- Fold the dough over the filling to create a half-moon shape, and pinch the edges tightly to seal. You can use a fork to crimp the edges for a decorative touch.
4. Fry the Lihapiirakka:
- Heat about 1 inch of vegetable oil in a large, deep skillet or pot over medium-high heat until it reaches 350°F (175°C).
- Carefully place the meat pies in the hot oil, a few at a time, and fry until they are golden brown on both sides, about 3-4 minutes per side.
- Use a slotted spoon to remove the pies from the oil and place them on a paper towel-lined plate to drain any excess oil.
