Ingredients:
- 4 fish fillets (such as tilapia, sole, or flounder), about 6 ounces each
- Salt and pepper to taste
- 1/4 cup all-purpose flour, for dredging
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/4 cup fresh lemon juice
- 1/2 cup chicken or vegetable broth
- 1/4 cup capers, drained
- 2 tablespoons chopped fresh parsley, for garnish
- Lemon slices, for garnish
Instructions:
- Prepare the Fish:
- Pat the fish fillets dry with paper towels and season them with salt and pepper on both sides.
- Dredge the fish fillets in flour, shaking off any excess.
- Cook the Fish:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the fish fillets to the skillet and cook for about 2-3 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and transfer them to a plate. Keep warm.
- Make the Sauce:
- In the same skillet, add the butter and let it melt.
- Stir in the lemon juice and chicken or vegetable broth, scraping up any browned bits from the bottom of the skillet.
- Bring the sauce to a simmer and cook for 2-3 minutes until slightly reduced.
- Finish the Dish:
- Stir in the capers and cook for another minute.
- Return the fish fillets to the skillet, spooning the sauce over them.
- Cook for an additional minute to heat the fish through and allow it to absorb some of the sauce.
- Serve:
- Transfer the fish fillets to serving plates.
- Spoon the sauce and capers over the fish.
- Garnish with chopped fresh parsley and lemon slices.
- Serve immediately, accompanied by your favorite side dishes such as steamed vegetables, rice, or pasta.
