  • 1 large onion, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika (or Kashmiri red chili powder for extra heat)
  • 1 teaspoon garam masala
  • 1 tablespoon tomato paste
  • 1/4 cup chicken broth or water
  • Salt, to taste
  • Fresh cilantro leaves, for garnish
Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the chicken pieces with half of the minced garlic, half of the grated ginger, half of the ground cumin, half of the ground coriander, half of the turmeric powder, and salt. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes in the refrigerator.
  2. Prepare the Sauce:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the cumin seeds and let them splutter.
    • Add the sliced onion and sauté until softened and lightly browned, about 3-4 minutes.
    • Stir in the remaining minced garlic, grated ginger, and green chilies. Sauté for another minute until fragrant.
    • Add the diced tomatoes and cook until they break down and form a thick sauce, about 5-6 minutes.
  3. Cook the Chicken:
    • Add the marinated chicken pieces to the skillet. Cook, stirring occasionally, until the chicken is browned on all sides and cooked through, about 8-10 minutes.
  4. Add Spices and Tomato Paste:
    • Sprinkle the remaining ground coriander, ground cumin, turmeric powder, paprika, and garam masala over the chicken. Stir well to coat the chicken with the spices.
    • Add the tomato paste and chicken broth (or water) to the skillet. Mix well to combine.
  5. Add Bell Peppers:
    • Add the sliced bell peppers to the skillet. Stir to combine with the chicken and sauce.
    • Cover the skillet and let the mixture simmer for another 5-7 minutes, or until the bell peppers are tender but still slightly crisp.
  6. Serve:
    • Taste and adjust the seasoning with salt, if needed.
    • Garnish the Chicken Jalfrezi with fresh cilantro leaves before serving.
    • Serve hot with steamed rice or warm naan bread. Enjoy the spicy and flavorful goodness of this classic Indian dish!
