Hey everyone! I wanted to share my go-to roast chicken recipe that never fails me. Itā€™s super simple, full of flavor, and perfect for any occasion. Let me know if you try it or have tips to make it even better!

Ingredients:​

  • 1 whole chicken (about 4-5 lbs)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 lemon, halved
  • 2 tsp dried thyme (or fresh sprigs if you have it!)
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth (or water)
  • Optional: Veggies for roasting (carrots, onions, potatoes)

Instructions:​

  1. Preheat your oven to 425Ā°F (220Ā°C).
  2. Pat the chicken dry with paper towels (helps the skin crisp up).
  3. Rub the olive oil all over the chicken, inside and out.
  4. Mix the garlic, thyme, paprika, salt, and pepper, then rub it all over the chicken.
  5. Stuff the cavity with the lemon halves and any extra garlic or herbs.
  6. Place the chicken in a roasting pan and add your veggies around it if youā€™re roasting them.
  7. Pour the chicken broth (or water) into the pan to keep it moist while roasting.
  8. Roast for 1 hour 20 minutes to 1 hour 30 minutes, depending on the size. Check the internal temp (should hit 165Ā°F in the thickest part).
  9. Let it rest for 10-15 minutes before carvingā€”itā€™s hard to wait, but trust me, itā€™s worth it!
