- 3 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 pound beef stew meat, cut into bite-sized pieces
- 6 cups beef broth
- 2 cups water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
- 8 ounces egg noodles
- 1 1/2 cups shredded Gruyere cheese (or Swiss cheese)
- Fresh parsley, chopped, for garnish (optional)
- Crusty bread, for serving (optional)
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.
- Add the minced garlic to the pot and cook for an additional 1-2 minutes, until fragrant.
- Increase the heat to medium-high and add the beef stew meat to the pot. Cook, stirring occasionally, until the beef is browned on all sides, about 5-7 minutes.
- Pour in the beef broth, water, Worcestershire sauce, and dried thyme. Season with salt and black pepper, to taste. Bring the soup to a simmer.
- Once the soup is simmering, reduce the heat to low and let it simmer, covered, for about 1 hour, or until the beef is tender.
- In the meantime, cook the egg noodles according to the package instructions. Drain and set aside.
- Once the beef is tender, add the cooked egg noodles to the soup and stir to combine. Let the soup simmer for an additional 5 minutes to heat through.
- Preheat the broiler. Ladle the French Onion Beef Noodle Soup into oven-safe bowls. Top each bowl with a generous amount of shredded Gruyere cheese.
- Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
