Ingredients​

  • 3 tbsp butter
  • 2 1/2 cups diced onions (2 to 3 onions) (brown, yellow or white)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 4 oz / 120 g cream cheese (cold), cut into cubes
  • 1/4 cup whole egg mayonnaise
  • 1/2 cup sour cream (The ideal choice is full-fat, although low-fat or even yogurt can be substituted if preferred)

Instructions​

  • First, melt the butter in a frying pan over medium heat. Add the onions, along with salt, pepper, onion powder, and cayenne pepper. Cook for 5 minutes, stirring occasionally. Then, reduce the heat to medium-low and continue cooking for 20 to 25 minutes, stirring occasionally, until the onions are tender, sweet, and golden brown. Remove the pan from the stove and let the onions cool.
  • In a separate bowl, combine cream cheese, sour cream, and mayonnaise, mixing until smooth. Use short bursts in the microwave if necessary to assist in achieving a smooth texture.
  • Once smooth, add the caramelized onions to the mixture and stir until evenly combined. Refrigerate the dip for at least 2 hours to allow the flavors to meld; overnight refrigeration is recommended for the best results.
  • To serve, allow the dip to come to room temperature and garnish with chopped chives if desired. This dip pairs perfectly with crinkle-cut plain potato chips.
