I recently made French Tarte Tatin, and it was an absolutely delightful experience! This classic upside-down caramelized apple tart is a true showstopper with its glossy, buttery, and perfectly caramelized apples atop a flaky pastry crust. Here’s how you can make this delicious dessert at home:

Ingredients:​

  • 6-8 firm apples (such as Granny Smith or Golden Delicious), peeled, cored, and quartered
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 tablespoon lemon juice

Instructions:​

1. Prepare the Apples:​

  • Preheat your oven to 375°F (190°C).
  • In a large, oven-proof skillet (preferably cast iron), melt the butter over medium heat. Add the sugar and stir continuously until it dissolves and starts to caramelize, turning a light amber color.

2. Caramelize the Apples:​

  • Carefully add the apple quarters to the caramel in a circular pattern, cut side up. Make sure they are packed tightly together, as they will shrink slightly as they cook.

3. Prepare the Puff Pastry:​

  • Place the skillet in the preheated oven and bake for about 25-30 minutes, or until the pastry is golden brown and puffed.

6. Invert and Serve:​

  • Remove the skillet from the oven and let it cool for a few minutes. Run a knife around the edges to loosen any parts that might be sticking.
  • Place a large plate or serving platter over the skillet and, using oven mitts, carefully invert the skillet so that the tart drops onto the plate, apple-side up.
