  • 4 cups chicken or vegetable broth

  • 1 teaspoon thyme (fresh or dried)
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/2 cup heavy cream or coconut milk (optional for creaminess)
  • Fresh parsley or chives for garnish

Instructions​

  1. Sauté the Onions: In a large pot, melt the butter or heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes.
  2. Add Garlic and Apples: Stir in the minced garlic and cook for another minute. Then add the diced apples, thyme, cinnamon, and a pinch of salt and pepper. Cook for an additional 5 minutes, allowing the apples to soften.
  3. Add Broth: Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes.
  4. Blend the Soup: Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, you can blend only part of it or mash some of the apples with a fork.
  5. Add Cream (Optional): If desired, stir in the heavy cream or coconut milk for a richer flavor. Heat gently without boiling.
  6. Serve: Ladle the soup into bowls and garnish with fresh parsley or chives.
