Hey everyone! I wanted to share this light and refreshing shrimp salad recipe thatā€™s perfect for summer or whenever youā€™re craving something fresh. Itā€™s got a little crunch, a little zest, and a whole lot of flavor! Hope you all enjoy it. Let me know if you have any fun twists on it! šŸ˜Š

Ingredients:

  • 1 lb cooked shrimp (peeled, deveined, and chopped if large)
  • 1/4 cup red onion, finely diced
  • 1/2 cup celery, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1/2 cup mayo (or Greek yogurt for a lighter version)
  • 1 tbsp Dijon mustard
  • Juice of 1 lemon
  • 1 tsp Old Bay seasoning (or just salt & pepper to taste)
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional, but adds a nice depth)

Instructions:

  1. In a large bowl, toss the shrimp, red onion, celery, cucumber, and parsley together.
  2. In a separate small bowl, mix the mayo (or Greek yogurt), Dijon mustard, lemon juice, Old Bay, garlic powder, and paprika.
  3. Pour the dressing over the shrimp mixture and gently fold everything together until well coated.
  4. Chill for at least 30 minutes so the flavors can meld.
  5. Serve on a bed of greens, in a sandwich, or with crackers!
