Hey everyone! I wanted to share this light and refreshing shrimp salad recipe thatās perfect for summer or whenever youāre craving something fresh. Itās got a little crunch, a little zest, and a whole lot of flavor! Hope you all enjoy it. Let me know if you have any fun twists on it! 


Ingredients:
- 1 lb cooked shrimp (peeled, deveined, and chopped if large)
- 1/4 cup red onion, finely diced
- 1/2 cup celery, diced
- 1/2 cup cucumber, diced
- 1/4 cup fresh parsley or cilantro, chopped
- 1/2 cup mayo (or Greek yogurt for a lighter version)
- 1 tbsp Dijon mustard
- Juice of 1 lemon
- 1 tsp Old Bay seasoning (or just salt & pepper to taste)
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika (optional, but adds a nice depth)
Instructions:
- In a large bowl, toss the shrimp, red onion, celery, cucumber, and parsley together.
- In a separate small bowl, mix the mayo (or Greek yogurt), Dijon mustard, lemon juice, Old Bay, garlic powder, and paprika.
- Pour the dressing over the shrimp mixture and gently fold everything together until well coated.
- Chill for at least 30 minutes so the flavors can meld.
- Serve on a bed of greens, in a sandwich, or with crackers!
