Fried Chicken:
- 2-3 lb boneless, skinless chicken thighs
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1.5 tbsp garlic powder
- 1.5 tbsp paprika
- 3 tsp cayenne
- 2 tbsp salt
- 1 large egg, beaten
- 1.5 cups buttermilk
- 8 cups vegetable oil (for frying)
Cheddar Chive Waffles:
- 1 serving favorite waffle mix (makes about 6 waffles)
- 1 cup shredded cheddar cheese
- 2 tbsp chopped chives (plus more for garnish)
- Maple syrup (for serving)
Instructions:
- Prepare Chicken: Salt the chicken and refrigerate for 6 hours or overnight.
- Mix Dry Ingredients: In a medium bowl, combine flour, cornstarch, garlic powder, paprika, cayenne, and salt.
- Mix Wet Ingredients: Beat the egg in a separate bowl, add buttermilk, and mix well.
- Dredge Chicken: Coat the chicken in the flour mixture, then place on a rack. Add 4 tbsp of the buttermilk mixture to the flour mixture to create chunks. Coat the chicken in the buttermilk mixture, then pat the chunky flour mixture onto the chicken.
- Chill Chicken: Refrigerate the coated chicken for at least 30 minutes, up to 12 hours.
- Prepare Waffles: Make the waffle batter according to box instructions, adding cheddar and chives. Cook waffles in a waffle maker and keep warm in the oven.
- Heat Oil: Heat oil in a fryer to 350°F.
- Fry Chicken: Fry chicken pieces until golden brown, about 5-8 minutes, turning frequently. Drain on a wire rack over paper towels. Keep oil at 350°F while frying.
- Serve: Sprinkle salt on the fried chicken. Serve hot with warm waffles, maple syrup, and additional chives for garnish.
