Ingredients:
- 2 lbs lamb shoulder, cut into chunks
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1/2 cup white wine
- 4 cups water or broth
- 1 head of lettuce or endive, roughly chopped
- 2 eggs
- Juice of 2 lemons
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot and brown the lamb pieces on all sides, then set aside.
- In the same pot, sauté the onion and garlic until softened.
- Deglaze with white wine, then return the lamb to the pot, adding water or broth. Simmer for 1.5-2 hours until the meat is tender.
- Add the chopped greens and cook for another 15 minutes.
- In a bowl, whisk eggs and lemon juice, then gradually add hot broth from the pot while whisking to temper.
- Pour the avgolemono sauce back into the pot, stir gently, and adjust seasoning with salt and pepper.
- Garnish with dill and serve warm with crusty bread.
