Frikase Me Arni (Lamb Fricassée)

Frikase Me Arni is a hearty Greek lamb stew simmered with greens and a tangy avgolemono sauce, making it the ultimate comfort food for cozy gatherings.


Ingredients:

  • 2 lbs lamb shoulder, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup white wine
  • 4 cups water or broth
  • 1 head of lettuce or endive, roughly chopped
  • 2 eggs
  • Juice of 2 lemons
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot and brown the lamb pieces on all sides, then set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Deglaze with white wine, then return the lamb to the pot, adding water or broth. Simmer for 1.5-2 hours until the meat is tender.
  4. Add the chopped greens and cook for another 15 minutes.
  5. In a bowl, whisk eggs and lemon juice, then gradually add hot broth from the pot while whisking to temper.
  6. Pour the avgolemono sauce back into the pot, stir gently, and adjust seasoning with salt and pepper.
  7. Garnish with dill and serve warm with crusty bread.
