Are you looking for something special to spice up your sandwich routine? You should not look farther than the delightful Fruit Sando. From the Japanese homeland over a century ago, this delicious delight now serves as a favorite snack and breakfast breakfast. Although you can quickly pick one up at bakeries or coffeehouses, making it at home is not difficult at all. Have just a couple of ripe and fresh fruits of your choice with sweet cream; it will be placed between the pillowy slices of milk and you will enjoy both visually and tastefully. What distinguishes the Fruit Sando from other sandwiches is not only its taste but also its presentation which looks like a mosaic with all different colors of fruits.

Ingredients:
- 2 small kiwis, peeled and halved
- 8 small to medium-sized strawberries, halved
- 1 mango, cut into 16 batons
- 1 cup cold heavy whipping cream
- 1 1/2 tablespoons sugar
- 1/4 teaspoon vanilla extract
- Eight 1/2-inch-thick slices Japanese milk bread
Directions:
- Pat dry the kiwis, strawberries, and mango.
- Whisk together cold heavy whipping cream, sugar, and vanilla until it forms almost stiff peaks.
- Spread whipped cream evenly on each slice of bread.
- Place half a kiwi in the middle of each bottom slice of bread. Arrange half a strawberry at each corner with the stem facing the kiwi. Add a piece of mango between the strawberry and kiwi.
- Cover each sandwich with a top slice of bread, cream-side down.
- Wrap each sandwich tightly in plastic wrap and lightly press down. Refrigerate for 2-8 hours.
- Unwrap sandwiches and optionally trim the crusts with a serrated knife. Cut sandwiches in half diagonally.
