For the custard:
- 4 cups whole milk
- 1/2 cup fine semolina
- 1 cup sugar
- 4 eggs
- 2 tsp vanilla extract
- 2 tbsp butter
For the phyllo:
- 1 package phyllo dough, thawed
- 1 cup melted butter
For the syrup:
- 1 cup sugar
- 1/2 cup water
- Juice of 1 lemon
- 1 strip of lemon peel
- 1 cinnamon stick
Instructions:
- For the custard, heat milk and sugar in a saucepan until warm, then slowly whisk in semolina. Cook until thickened, then remove from heat and stir in butter, vanilla, and beaten eggs.
- Preheat oven to 350°F (175°C) and butter a baking dish.
- Layer half the phyllo sheets in the dish, brushing each with butter. Pour in the custard and layer the remaining phyllo on top, buttering each sheet.
- Bake for 45-50 minutes until golden and crisp.
- While it bakes, simmer syrup ingredients until slightly thickened, then let cool.
- Pour the cooled syrup over the hot galaktoboureko, allow it to soak, and serve once fully cooled.
