Garides Fournou Me Skordalia is a bold and flavorful Greek dish where shrimp are baked and paired with creamy, garlicky skordalia for a hearty and aromatic meal.

Ingredients:

For the shrimp:
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1/2 cup white wine
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the skordalia:
  • 2 large potatoes, peeled and boiled
  • 4-6 garlic cloves, minced
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt to taste

Instructions:
  1. Preheat the oven to 375°F (190°C). Toss the shrimp with olive oil, white wine, oregano, salt, and pepper, then arrange in a baking dish.
  2. Bake the shrimp for 15-20 minutes, or until fully cooked.
  3. For the skordalia, mash the boiled potatoes in a bowl until smooth.
  4. Gradually mix in the garlic, olive oil, lemon juice, and salt, stirring until the mixture becomes creamy.
  5. Serve the baked shrimp alongside the skordalia, garnished with fresh parsley.
