Garlic Parmesan Roasted Potatoes

I am so excited to share this quick and easy-to-make recipe that I absolutely love!! I've been eating this for quite a while now, as it is so yummy and very easy to make. I hope that you guys will love it too.

Ingredients:

  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme (optional)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)
Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, grated Parmesan cheese, dried thyme (if using), salt, and pepper until evenly coated.
  3. Arrange the potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil.
  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges, stirring halfway through cooking.
  5. Once cooked, remove from the oven and garnish with chopped fresh parsley if desired.
