Giaprakia is a traditional Greek dish of cabbage rolls stuffed with a flavorful mixture of rice, herbs, and ground meat, simmered in a savory sauce for a hearty meal.

Ingredients:
  • 1 large head of cabbage
  • 1 lb ground beef or pork (or a mix)
  • 1 cup rice (uncooked)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • 1/2 cup olive oil
  • 2 cups chicken or vegetable broth
  • Juice of 1 lemon

Instructions:
  1. Carefully remove the cabbage leaves and blanch them in boiling water for 2-3 minutes to soften.
  2. In a bowl, mix the ground meat, rice, onion, garlic, parsley, dill, salt, and pepper.
  3. Place a small amount of the filling on each cabbage leaf, roll it tightly, and tuck in the edges.
  4. Arrange the rolls seam-side down in a large pot, layering them if necessary.
  5. Drizzle with olive oil, pour in the broth, and add lemon juice. Simmer gently for 1.5-2 hours until the rice and meat are cooked.
  6. Serve warm, with extra lemon juice or a dollop of yogurt for garnish.
