- 1 large head of cabbage
- 1 lb ground beef or pork (or a mix)
- 1 cup rice (uncooked)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- 1/2 cup olive oil
- 2 cups chicken or vegetable broth
- Juice of 1 lemon
Instructions:
- Carefully remove the cabbage leaves and blanch them in boiling water for 2-3 minutes to soften.
- In a bowl, mix the ground meat, rice, onion, garlic, parsley, dill, salt, and pepper.
- Place a small amount of the filling on each cabbage leaf, roll it tightly, and tuck in the edges.
- Arrange the rolls seam-side down in a large pot, layering them if necessary.
- Drizzle with olive oil, pour in the broth, and add lemon juice. Simmer gently for 1.5-2 hours until the rice and meat are cooked.
- Serve warm, with extra lemon juice or a dollop of yogurt for garnish.
