- 1 lb dried gigantes beans (giant butter beans)
- 1/4 cup olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 1/2 cup fresh parsley, chopped
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 cup water or vegetable broth
- Fresh dill or parsley for garnish
Instructions:
- Soak the beans overnight, then drain and boil them in fresh water for 1-1.5 hours until tender. Drain and set aside.
- Preheat the oven to 375°F (190°C). In a skillet, heat olive oil and sauté the onion and garlic until soft.
- Add the diced tomatoes, tomato paste, parsley, oregano, salt, and pepper, then simmer for 10 minutes.
- Combine the cooked beans and sauce in a baking dish, adding water or broth if needed to prevent drying.
- Bake for 45-60 minutes, stirring occasionally, until the sauce thickens and the beans are infused with flavor.
