Gigantes Sto Fourno is a traditional Greek dish featuring tender giant beans baked in a rich tomato sauce with olive oil and herbs, perfect as a hearty main or side dish.

Ingredients:
  • 1 lb dried gigantes beans (giant butter beans)
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup water or vegetable broth
  • Fresh dill or parsley for garnish

Instructions:
  1. Soak the beans overnight, then drain and boil them in fresh water for 1-1.5 hours until tender. Drain and set aside.
  2. Preheat the oven to 375°F (190°C). In a skillet, heat olive oil and sauté the onion and garlic until soft.
  3. Add the diced tomatoes, tomato paste, parsley, oregano, salt, and pepper, then simmer for 10 minutes.
  4. Combine the cooked beans and sauce in a baking dish, adding water or broth if needed to prevent drying.
  5. Bake for 45-60 minutes, stirring occasionally, until the sauce thickens and the beans are infused with flavor.
  6. Garnish with fresh dill or parsley and serve with crusty bread.
