I'm gonna share with you guys one of my favorite Filipino dish! I remember asking my mom to cook these every Sunday after church. Please try it and let me know if you like it!

Ingredients:
  • 2 lbs chicken, cut into serving pieces
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, julienned
  • 2-3 pieces green chili peppers (siling haba), sliced diagonally (optional)
  • 1 cup spinach leaves or chili leaves (dahon ng sili)
  • 2 tablespoons fish sauce (patis)
  • 1 tablespoon cooking oil
  • Salt and pepper to taste

Instructions:
  1. Heat oil in a large pot over medium heat. Sauté garlic, onion, and ginger until fragrant.
  2. Add chicken pieces to the pot and cook until lightly browned.
  3. Pour in coconut milk and chicken broth. Bring to a boil, then lower the heat and let simmer for about 20-25 minutes or until the chicken is cooked through and tender.
  4. Stir in fish sauce and season with salt and pepper to taste.
  5. Add green chili peppers (if using) and spinach leaves or chili leaves. Let simmer for another 2-3 minutes until the vegetables are wilted and cooked.
  6. Serve hot over steamed rice.
