Hey there, fellow foodies! I recently experimented with a gluten-free version of dumplings. If you or someone you know is gluten-sensitive or just looking to try something new, this recipe is a must-try!

- 1 teaspoon xanthan gum (omit if your flour blend already contains it)
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup water, plus more as needed
- Filling of your choice (e.g., ground pork, chicken, or veggies)
- Optional: soy sauce or dipping sauce for serving
- In a large mixing bowl, whisk together the gluten-free flour blend, xanthan gum (if using), and salt.
- Make a well in the center of the flour mixture and add the eggs and 1/2 cup of water.
- Using a fork or your hands, gradually incorporate the wet ingredients into the flour mixture until a dough forms. If the dough seems too dry, add more water, a tablespoon at a time, until you achieve a smooth, pliable dough.
- On a lightly floured surface (using more gluten-free flour), knead the dough for a few minutes until it's smooth and elastic.
- Divide the dough into small balls, about 1 to 1.5 inches in diameter.
- Roll out each dough ball into a thin circle, then place a spoonful of your chosen filling in the center.
- Fold the dough over the filling to create a half-moon shape, and pinch the edges to seal.
- Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for about 5-7 minutes, or until they float to the surface and are cooked through.
- Remove the dumplings with a slotted spoon and serve hot with your favorite dipping sauce.
