Ingredients:
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1/4 cup vegetable oil (for frying)
- 1/2 cup granulated sugar
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1/4 cup water
- 1 tablespoon sesame seeds (optional)
- Chopped nuts (such as peanuts or walnuts) for garnish (optional)
Instructions:
- Prepare Sweet Potatoes:Peel the sweet potatoes and cut them into 1-inch cubes. Rinse them in cold water to remove excess starch, then pat them dry with a paper towel.
- Fry Sweet Potatoes:Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the sweet potato cubes in batches, making sure not to overcrowd the pan. Fry them until they are golden brown and crispy, about 5-7 minutes per batch. Use a slotted spoon to transfer the fried sweet potatoes to a plate lined with paper towels to drain any excess oil.
- Prepare Caramel Sauce:In a separate pan, combine the granulated sugar, honey, soy sauce, and water. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture starts to bubble. Let it cook for an additional 2-3 minutes until it thickens slightly.
- Coat Sweet Potatoes:Add the fried sweet potatoes to the pan with the caramel sauce. Gently stir to coat the sweet potatoes evenly with the sauce. Continue to cook for an additional 2-3 minutes, allowing the sweet potatoes to absorb the caramel and become glossy.
- Garnish and Serve:Once coated, transfer the caramelized sweet potatoes to a serving dish. Sprinkle with sesame seeds and chopped nuts, if using. Serve warm or at room temperature.
