One of my go-to methods is to sauté the chicken first until it’s golden brown and cooked through, then remove it from the pan and set it aside. In the same pan, I add a bit of garlic and sauté the spinach until it’s wilted, then toss the chicken back in. Sometimes I add a splash of lemon juice or a sprinkle of parmesan for extra flavor.
