  • 2 cloves garlic, minced
  • 1 pound beef stew meat, cubed

  • 1 teaspoon caraway seeds
  • 2 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 large potatoes, peeled and diced
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)
Instructions:
  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
  2. Add the cubed beef stew meat to the pot and cook until browned on all sides.
  3. Stir in the paprika and caraway seeds, and cook for another minute to toast the spices.
  4. Pour in the beef broth and diced tomatoes (with their juices), and add the diced potatoes to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1 to 1.5 hours, or until the beef is tender and the potatoes are cooked through.
  6. Season with salt and pepper to taste.
  7. Serve the goulash hot, garnished with chopped parsley if desired.
