- 1 pound beef stew meat, cubed

- 2 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 large potatoes, peeled and diced
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
- Add the cubed beef stew meat to the pot and cook until browned on all sides.
- Stir in the paprika and caraway seeds, and cook for another minute to toast the spices.
- Pour in the beef broth and diced tomatoes (with their juices), and add the diced potatoes to the pot.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1 to 1.5 hours, or until the beef is tender and the potatoes are cooked through.
- Season with salt and pepper to taste.
- Serve the goulash hot, garnished with chopped parsley if desired.
