Ingredients
- 2 1/2 cups blanched almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/3 cup honey
- 2 extra-large eggs
- 1/4 cup melted coconut oil (or grass-fed butter, palm shortening, or ghee)
- 2 teaspoons vanilla extract
- 1 tablespoon unsweetened non-dairy milk (e.g., almond milk)
- 3/4 cup dairy-free, gluten-free semi-sweet chocolate chips
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8-inch square baking pan with coconut oil.
- In a large mixing bowl, whisk together the almond flour, baking soda, and sea salt.
- In a separate bowl, combine the honey, eggs, melted coconut oil, vanilla extract, and non-dairy milk. Mix well.
- Add the wet ingredients to the dry ingredients and mix thoroughly until well combined.
- Fold in the chocolate chips and walnuts (if using).
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the bars to cool in the pan for 10-15 minutes before cutting them into squares.
